Today Peter Lauterbach runs the house in the fourth generation. Like his father, he gained experience in the best Michelin-starred restaurants in Europe: he worked in kitchens such as the Schwarzwaldstube and cooked in restaurants in Bayrischzell, St. Moritz, Zurich, Ascona and Australia. But as he had already stood in the kitchen at home as a child, the way back to Gräfenthal was clear. Today he sets the culinary tone in the restaurant’s kitchen and combines traditional dishes with international delights from France, Asia and around the world.

Bakery experience

The Lang Genusswelt in Bayreuth

© Andreas Harbach

For more than 250 years, bread has been baked and beer enjoyed at Jean-Paul-Straße 7. For more than 100 of those years it has been in the hands of the Lang family of master bakers – making Bäckerei Lang the oldest bakery still in operation in Bayreuth (its right to fire a baking oven dates back to 14 December 1764) and possibly even the oldest in Franconia.

The heart of the Lang Genusswelt is made up of: Upper Franconian bread and pastry specialities, unique designer rolls, creations from the patisserie, traditional baked goods from times gone by and preserves made the way grandma did.

Some culinary highlights

The Buschenschänke
© Stefan Dörfler

Four times a year (May, June, September and October), in front of the bakery and in the idyllic courtyard, the traditional Buschenschänke serves home-brewed Beck´n Bier made according to old brewing tradition, hearty classic Brotzeit snacks, a daily changing Bayreuth speciality dish and Bäckerei Lang’s cult dessert, the oven-fresh Buddakung.

Growing Landweizen and Rotkorn

The bakers have teamed up with a dedicated farmer and a passionate miller to have Upper Franconian Landweizen (country wheat) and Rotkorn (red-grain wheat) grown and milled exclusively in the heart of the Fichtelgebirge, free from pesticides. In doing so, they want to help preserve these two endangered cereal varieties and, they hope, also protect their customers from intolerances.

Traditional baked goods

The Genusswelt also has a range of traditional baked goods in its repertoire for New Year, Carnival, Easter, Mother’s Day, Kerwa (church fair), Harvest Festival, All Saints’ Day, Christmas and throughout the year.
For example the Springerle or Pfeffernüsse, which rise out of the mould and “jump” (springen) during baking – hence the name Springerle. According to Franconian folk belief, and because the moulded images are beautiful to look at, it is said that hearts leap for joy. The poet Jean Paul is said to have loved them too, by the way.
